Poke Bowl For the Family

A poke bowl for the whole family! It’s like sushi that your kiddos might actually like. Although who knows, it’s 2023, and maybe your kids love sushi. Mine aren’t ready for sushi yet, but they love these bowls. The recipe is simple and you can certainly include your little ones in the cooking process. Whether it’s stirring the spicy mayo sauce or learning how to peel carrots and sprinkle sesame seeds on top, they will surely enjoy making this delicious recipe with you!

Serving Size: 4 adults

Prep Time: 10 minutes

Cook Time: 15 minutes

Ingredients:

  • 1 lb raw salmon (I love to use an orange marinade, like this: Orange Salmon Recipe)
  • 1 medium cucumber, chopped into bite-sized pieces
  • 2 medium carrots, julienned (or use storebought matchstick carrots)
  • 2 ripe avocados, sliced
  • 1/2 cup shelled edamame (optional)
  • 4 cups long grain white rice, cooked (I use this brand: Birds Eye Steamfresh Rice)
  • 1/4 cup mayo (I use this brand: Reduced Fat Mayonnaise)
  • 1 tsp siracha
  • 1 tsp sweet Thai chili sauce (Thai Kitchen Sweet Chili Sauce – Amazon)
  • 1/4 tsp garlic powder
  • a pinch of salt
  • 1 tsp sesame seeds

Instructions:

  1. Prepare salmon according to cooking instructions
  2. While the salmon is cooking, evenly distribute the rice into bowls. Follow the picture above for an adult bowl, evenly distributing the carrots, cucumber, avocado, and edamame.
  3. Prepare the spicy mayo sauce by adding mayo, siracha, thai sauce, garlic powder, and salt into a bowl. Stir. Add the sauce into a topping dispenser or a plastic bag and cut a small whole in one corner (think: old fashion method of applying icing!)
  4. Once the salmon is cooked, add salmon to each bowl.
  5. Drizzle the spicy mayo over the bowl and sprinkle sesame seeds.
