Tropical Toast
Tropical toast? No way, right? This is definitely a recipe you can’t judge until you try. I doubted this recipe and I most certainly was wrong.
I used papaya and mango, which are spring/summer fruits, each with a unique texture and flavor. Papaya has a creamy, butter-like texture with a semi-sweet fruit taste. Mango has a soft and pulpy texture, and when ripe, delightfully sweet and tangy!
The mixture of these two fruits with creamy peanut butter on top of toasted bread is just right!

Ingredients:
- 2 pieces of whole wheat bread
- Sliced mango
- Sliced papaya
- Cream peanut butter
- Coconut flakes
- Option to sprinkle chia, poppy, and sesame seeds on top
Instructions:
- Toast the two pieces of bread
- Slice the mango:
- Peel the mango first
- use a paper towel to hold the mango
- Using a small, sharp knife, cut the mango in half (avoiding the pit)
- Cut the two halves into smaller pieces
- With the remaining mango surrounding the pit, hold the mango vertically and cut from top to bottom
- Peel the mango first
- Slice the Papaya:
- Cut the papaya in half (lengthways)
- Scoop the seeds out with a spoon
- Using a small, sharp knife, cut the remainder of the papaya out, removing it from the skin
- Add the peanut butter, sliced fruit, and then top with coconut flakes and seeds!
- Enjoy!
