Winter Kale & Pomegranate Salad
A salad for the season! The easiest massaged kale salad that is perfect for the fall and winter seasons. If you’re new to a “massaged salad” it means exactly what is sounds like. You will massage the salad with your hands to allow the dressing to seep into the crunchy kale. This creates a more desirable texture for eating kale.

Ingredients:
- 4-6 cups of kale (about 5 handfuls)
- 1 sweet potato, chopped into bite-size pieces
- 2 tbsp olive oil
- 1 cup pomegranate seeds
- 1/2 cup pumpkin seeds
- 1 tsp sea salt
- balsamic vinaigrette dressing
- Option to use a strawberry or fruity balsamic vinaigrette
Instructions:
- 1-2 hours before eating the salad, pour 1 1/2 tbsp of olive oil onto the kale. Gentle massage the kale, spreading the olive oil evenly. This softens the kale, making the texture more desirable to eat!
- allow the kale to sit in the refrigerator until ready to eat.
- 20 minutes before eating the salad, preheat the oven to 415 degrees F.
- Place the chopped sweet potato on a baking pan and drizzle the remaining 1/2 tbsp of olive oil. Sprinkle salt and pepper as desired. Bake the sweet potatoes for 20 minutes, checking periodically to make sure the potatoes are not burning.
- Remove the kale from the refrigerator and add the pomegranate seeds, pumpkin seeds, and once ready, the sweet potatoes. Drizzle balsamic dressing as desired and enjoy!
