Thai Curry with Chicken

This Thai curry recipe is refreshing, nourishing, and full of flavor! If you’re new to Thai food, this is a great way to try the new flavors. It’s not too spicy and the flavor is not overwhelming. Check it out!

Ingredients:

  • 4 tbsp olive oil, separated into 2tbsp
  • 1 lb raw chicken breast
    • cut into small, bite-sized pieces
  • 2 tbsp red curry paste (Thai Kitchen Red Curry Paste – Amazon)
  • 1 squash, sliced into quarters
  • 1 zucchini, sliced into quarters
  • 1 cup grated carrots
  • 4-6 cloves garlic, minced
  • 1 yellow onion, diced
  • 2 tbsp fresh ginger, grated
  • 1 can coconut milk – I usually use 2 cans of Thai Kitchen Canned Coconut Milk 12 Pack – Amazon) and add more to reach desired consistency. Do not use lite coconut milk, it will not create the same flavor or texture!
  • 1-2 tbsp cornstarch (use more or less depending on desired thickness)
  • 1 tbsp Thai sweet chili sauce
  • 3 tbsp soy sauce
  • 3 tbsp fresh squeezed lime juice
    • use 1 tbsp while cooking chicken, and the remainder in the vegetable mixture
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1-2 tsp salt, to taste
  • 1 tsp pepper
  • 6 cups cooked white rice (or 2 cups uncooked to create 6 cups cooked)

Toppings:

  • lime zest
  • basil or cilantro

Instructions:

  1. In a medium pan, 2 tbsp heat olive oil to medium heat and add the chicken. Pour in red curry paste, onions, and garlic. Stir frequently.
  2. In a large pot, add the remaining 2 tbsp of olive oil and vegetables. Sautee until vegetables are cooked. Once the vegetables are cooked, add the remaining ingredients (coconut milk, spices, etc.) except for the cornstarch and rice. Stir and allow ingredients to simmer for 5 minutes.
  3. Add the chicken mixture to the vegetable mixture.
  4. Allow mixture to simmer for 1-2 minutes. (the longer the ingredients sit together the more flavor you will get! I like to make this recipe in the morning, store it in the fridge and serve in the evening.)
  5. Reduce heat to low, add cornstarch, Stir. Add water until the mixture reaches desired consistency.
  6. Add toppings and enjoy!
