Chocolate Chip Banana Muffins
These chocolate chip banana muffins are perfect for a quick breakfast or an afternoon snack. They are packed with nutrients and provide just the right amount of sweetness to leave you feeling fueled and satisfied.
You can keep these muffins in the fridge for about a week or store them in the freezer for up to 6 months!
Ingredients:
- 1 cup flour
- 1/3 cup cocoa powder
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
- 3 ripe bananas
- 1/2 cup honey
- 1 egg
- 1 cup applesauce
- 2 tbsp vegetable oil
- 2 tbsp chia seeds
- 1 cup semisweet chocolate chips
Instructions:
- Preheat the oven to 375 degrees F. Line a 12 muffin tray with muffin liners and set aside.
- In a large mixing bowl, mix together flour, cocoa powder, baking soda, baking powder, and salt.
- Using a mixer, peel bananas and begin mixing bananas until no lumps remain.
- Slowly pour in honey, egg, apple sauce, and oil to the banana mixture and continue to mix on low.
- Fold the dry ingredients unto the banana mixture and gently mix all ingredients together. Add the chocolate chips and chia seeds and stir with a wooden spoon or spatula.
- Pour the mixed batter into the muffin tray and bake for 20-25 minutes.
- Once baked, allow muffins to cool and serve warm.
- Store muffins in the refrigerator in an air-tight container or bag. Or freeze for 6 months. Re-heat before serving.
