Arugula, Lentil, Sweet Potato Salad

Always a fan of an easy, go-to salad where I can use whatever ingredients I have in my house!

I threw this salad together with what I had, but you can add in so much more!

Instructions

  • Preheat oven to 375 degrees F
  • Steam the broccoli (stove top or microwave)
  • Cook the lentils (if not already cooked)
  • Slice the potatoes into small pieces and toss in olive oil, salt, and pepper
  • Place the potatoes on a baking sheet and roast for 20-25 minutes
    • I like my sweet potatoes to be a little crunchy so I leave in the oven for about 30 minutes.
  • While the potatoes are roasting, place the spinach and arugula in a medium sized salad bowl
  • In a separate small bowl, mix together 1-2 tbsp tahini (add more or less depending on how much dressing you like), add 1-2 tsps of lemon juice, and 1-2 “dashes” of everything bagel seasoning
    • I made this dressing by adding ingredients and then taste testing. You have the freedom to add more or less of whatever!
  • Once the potatoes are roasted, broccoli steamed, and lentils cooked, add all to the salad bowl. Drizzle with your homemade dressing.
  • Enjoy!
