Arugula, Lentil, Sweet Potato Salad
Always a fan of an easy, go-to salad where I can use whatever ingredients I have in my house!
I threw this salad together with what I had, but you can add in so much more!

Ingredients
- 1-2 cups baby arugula
- 1-2 cups baby spinach
- 1 cup broccoli (steamed)
- 1 cup sweet potatoes
- 1 cup purple sweet potatoes
- 1/2 cup lentils (cooked)
- 1 tbsp olive oil
- 1 pinch of salt
- 1 dash of pepper
- Tahini, lemon, and everything bagel seasoning
Instructions
- Preheat oven to 375 degrees F
- Steam the broccoli (stove top or microwave)
- Cook the lentils (if not already cooked)
- Slice the potatoes into small pieces and toss in olive oil, salt, and pepper
- Place the potatoes on a baking sheet and roast for 20-25 minutes
- I like my sweet potatoes to be a little crunchy so I leave in the oven for about 30 minutes.
- While the potatoes are roasting, place the spinach and arugula in a medium sized salad bowl
- In a separate small bowl, mix together 1-2 tbsp tahini (add more or less depending on how much dressing you like), add 1-2 tsps of lemon juice, and 1-2 “dashes” of everything bagel seasoning
- I made this dressing by adding ingredients and then taste testing. You have the freedom to add more or less of whatever!
- Once the potatoes are roasted, broccoli steamed, and lentils cooked, add all to the salad bowl. Drizzle with your homemade dressing.
